Baked Field Mushroom and Goat's Cheese

Ingredients

  • 1 Large mushroom per person
  • 1 round goat's cheese per person
  • 1 small red onion between two
  • Finely chopped garlic
  • 1 lemon between four
  • Salt and pepper

Finely chop onion and garlic.

Add onion, garlic, salt and pepper to pyrex dish.

Squeeze lemon juice inside mushrooms, slice lemon skin and add to dish.

Microwave for four minutes with lid on.

Place mushrooms in a baking dish, upside down. Scrape out flesh of lemon and discard skin. Spoon onions and lemon juice into mushrooms.

Serve with boiled new potatoes.
